Chewy Chocolate Chip Oatmeal Cookie Recipe - Perfect Every Time

This family recipe is simple, delicious and highly customizable. It is a perfect base that can be easily altered to your taste, add nuts, raisins, dried fruit, chocolate chips or chunks, coconut - the sky is the limit! If you follow the recipe exactly I promise you will not be disappointed with these soft, chewy oatmeal cookies that are primo for dunking. Bring smiles to your entire family with this quick and easy oatmeal cookie recipe!

Chewy Oatmeal Cookies

Yield: 12-18 medium to large cookies
Prep time: 20 minutes
Total time: 1 hour

Ingredients

1 ½ cups flour
3 cups oatmeal
¼ teaspoon salt

1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
2 tablespoons of water (if needed)*

1 cup chocolate chips

Directions

Preheat oven to 350°F.

Mix all dry ingredients in a bowl. In a separate bowl, cream together butter and sugars. Once creamed, add eggs and vanilla. Mix well until well incorporated, if it is too thick, add up to two tablespoons of water. Alternate adding dry ingredients (oatmeal mix and chocolate chips) to the wet ingredients until fully incorporated.

Spoon onto cookie tray and bake for 15-20 minutes depending on the size. 

Notes:

For the chewiest results, I prefer to make these cookies on the bigger side. One large heaping spoon fill should comfortably make six cookies per tray and will be perfect in 18-20 minutes depending on your oven.

If your wet ingredients are thick and are not reaching a smooth consistency, add one tablespoon of water at a time as needed. Once you add the dry mix, stirring will take some strong arm power, so it is best to have a smooth batter prior.

Alternating the dry mix means adding one cup of the oatmeal mix, stir, then add a portion of your chocolate chips or alternatives, stir, add oatmeal mix, stir and so on until all the dry ingredients are incorporated. I am not sure why we do it this way, all I know is it works divinely so I do not ask questions!

This recipe is highly customizable, use whatever you have in the cupboard and have fun with it!
